Ingredient notes and smart substitutions
Chicken
Boneless skinless breasts swap one for one but cook faster. Cook them on LOW for 2 1/2 to 3 hours before the rice goes in. Bone in thighs with the skin removed also work and need about 30 minutes more. All chicken must reach 165°F. Rotisserie chicken is a shortcut, but then you lose the flavor the raw chicken gives the broth, so add 1 teaspoon of chicken bouillon.
Rice
Long grain white rice, jasmine or basmati all work one for one with the same liquid and time. Converted or parboiled rice is even more forgiving and takes about the same time. Brown rice needs 1/2 cup more broth and roughly 2 to 2 1/2 hours on HIGH, which makes it a poor fit for this method. Do not use instant rice.
Chicken broth
Vegetable broth swaps one for one. Water plus 2 teaspoons of chicken bouillon also works. If you only have regular sodium broth, skip the added salt until you taste at the end.
Vegetables
Diced parsnip can replace the carrot, and a chopped leek can replace the onion. Frozen mixed vegetables can stand in for the peas at the same amount. Add 8 ounces of sliced mushrooms with the aromatics for an earthier version.
Parmesan and butter
The cheese is optional and can be left out or replaced with 1/3 cup of shredded cheddar for a more casserole like result. Olive oil can replace the butter at the same amount, though butter gives a rounder flavor.
How to make it
1. Season the chicken and load the cooker
Pat the chicken dry and season it with salt, pepper, paprika and thyme. Scatter the onion, carrot, celery and garlic in a 6 quart slow cooker, lay the chicken on top and pour in 2 cups of the broth.
2. Cook the chicken
Cover and cook on LOW for 3 to 4 hours or on HIGH for 2 to 2 1/2 hours until the chicken reaches 165°F. Keep the lid closed. The vegetables will be soft and the broth will taste deeply of chicken.

3. Shred and add the rice
Move the chicken to a plate and shred it into large pieces. Stir the rinsed rice and the remaining 1 1/2 cups of broth into the cooker, scraping the bottom so nothing sticks. Return the chicken on top without stirring it in.
4. Cook the rice
Cover and cook on HIGH for 45 to 60 minutes until the rice is tender and most of the liquid is absorbed. Check at 45 minutes, and if the rice is still crunchy, give it 10 to 15 more minutes with the lid on. This step is always on HIGH regardless of how the chicken was cooked.
5. Finish
Stir in the frozen peas, butter and Parmesan. Cover for 5 minutes so the peas heat through. Fluff with a fork, taste for salt and pepper, and top with chopped parsley.

Common mistakes and how to fix them
The rice is mushy. It went in too early, or it cooked on LOW. Always add rice near the end and cook it on HIGH for 45 to 60 minutes. If it has already gone soft, stir in a little more shredded chicken and Parmesan and call it a creamy rice, which is still good.
The rice is crunchy. Not enough time or not enough liquid. Add 1/4 cup of hot broth, cover and cook another 15 minutes on HIGH. Some slow cookers run cool, so it may need a full 75 minutes.
The dish is soupy. The chicken released more liquid than expected. Remove the lid and cook on HIGH for 10 minutes to let it evaporate, or stir in 1/4 cup more rice and cook 20 minutes longer.

The bottom stuck or scorched. Rice on the bottom of a hot insert can catch. Scrape well when you add the rice, and grease the insert before the vegetables go in. A slow cooker liner also helps.
The flavor is bland. Rice absorbs a lot of salt. Season generously at the end and finish with a squeeze of lemon, which brightens the whole pot more than more salt would.
Timing and make ahead plan
Prep is about 15 minutes. The chicken cooks unattended for 3 to 4 hours on LOW, then the rice takes about an hour on HIGH. Plan for a total of 4 1/2 to 5 hours on the LOW route, or 3 to 3 1/2 hours on HIGH.
Chop the vegetables and season the chicken up to 2 days ahead and store them separately in the refrigerator. In the morning, everything goes in the cooker in 2 minutes.
The seasoned raw chicken and chopped vegetables can be frozen together for up to 3 months. Thaw completely in the refrigerator for 24 hours before cooking. The chicken must be fully thawed before it goes in the slow cooker.
Because the rice step needs attention, this recipe works best when you are home for the last hour. If your cooker has a timer, set the chicken to finish about an hour before you plan to eat, then add the rice when you get in.
Tips for the best chicken and rice
- Rinse the rice under cold water until it runs mostly clear. It removes surface starch and keeps the grains from clumping.
- Add the rice and broth while the cooker is still hot. Cold liquid slows everything down.
- Do not stir once the rice is in. Stirring releases starch and makes the dish gluey.

Variations
Cheesy chicken and rice
Stir 1 cup of shredded sharp cheddar into the finished rice in place of the Parmesan and add 1 cup of steamed broccoli florets with the peas. It edges toward a casserole and kids tend to like it.
Lemon herb chicken and rice
Add the zest of 1 lemon with the rice and stir in 2 tablespoons of lemon juice, 1 tablespoon of chopped fresh dill and the parsley at the end. Skip the Parmesan.
Spanish style chicken and rice
