Slow Cooker Chicken Tacos (Juicy, Shredded, 10 Minute Prep)

Slow Cooker Chicken Tacos (Juicy, Shredded, 10 Minute Prep)

Taco night should be the easy night. These slow cooker chicken tacos make that true. Chicken goes into the pot with salsa, a squeeze of lime and a quick homemade taco seasoning, and by dinner it shreds into juicy, flavorful pieces ready for warm tortillas.

The prep takes about ten minutes, and most of that is measuring spices. There is no browning, no chopping beyond a lime and an onion, and the chicken comes out better than anything from a packet and a skillet.

It also makes enough to feed a family twice. Leftover taco chicken is the start of burrito bowls, quesadillas, nachos and salads for the rest of the week.

Why this recipe works

Shredded chicken in a slow cooker can turn out dry and bland. Here is why this one does not.

  • A mix of chicken thighs and breasts gives you juicy meat from the thighs and lean, easy shredding from the breasts. All thighs or all breasts also works, with timing adjustments below.
  • Salsa provides tomato, onion, chile and acid in one jar, so the chicken cooks in a fully seasoned liquid instead of plain broth.
  • A homemade blend of chili powder, cumin, smoked paprika, garlic and oregano tastes fresher than a packet and lets you control the salt.
  • Lime juice goes in twice, once at the start and once at the end, so the flavor stays bright after hours of cooking.
  • The chicken is shredded and returned to the reduced juices, which is the single biggest difference between moist taco chicken and dry taco chicken.

Ingredients you’ll need

The measured list is in the recipe card. Here is what to know about the key players.

Ingredients for Slow Cooker Chicken Tacos laid out on the table

Chicken. The recipe calls for 1 1/2 lb boneless skinless thighs plus 1 lb boneless skinless breasts. Thighs bring the flavor and moisture. Breasts bulk it up and shred into long strands.

Salsa. A 16 oz jar of your favorite red salsa. Medium heat is a good middle ground. Chunky salsa gives more texture in the finished chicken.

Chili powder, cumin, smoked paprika, garlic powder, onion powder and oregano. This is the taco seasoning. It is savory and smoky with just a hint of heat.

Onion and garlic. Half a diced onion and a few cloves of garlic melt into the sauce and add sweetness.

Lime. Two limes. One for the pot, one for finishing. Fresh only.

Chicken broth. Just half a cup. Salsa and the chicken supply most of the liquid, and too much broth makes the chicken taste boiled.

Tortillas and toppings. Warm corn or flour tortillas, shredded lettuce or cabbage, cheese, sour cream, avocado, pickled onions, cilantro and more lime.

Ingredient notes and smart substitutions

Chicken

Use all thighs for the juiciest result. Use 2 1/2 lb and cook 5 to 6 hours on LOW. For all breasts, use 2 1/2 lb and cook only 3 1/2 to 4 hours on LOW or 2 to 2 1/2 hours on HIGH, then check for 165°F. Breasts dry out quickly once they pass that mark. Whatever you choose, the chicken must be fully thawed before it goes in.

Salsa

Salsa verde makes an excellent tangy version in the same amount. A 14.5 oz can of fire roasted diced tomatoes plus 1 minced jalapeño and 1 tsp salt can stand in if you have no salsa. Restaurant style thin salsa works but produces more liquid, so use 1 1/2 cups instead of the full jar.

Taco seasoning

One packet of store bought taco seasoning, about 1 oz, replaces the homemade blend. Skip the added salt in that case, since packets are salty. For a smokier profile, swap 1 tsp of the chili powder for 1 tsp chipotle powder.

Lime

Two limes yield about 1/4 cup juice. Bottled lime juice works in a pinch. Lemon is not ideal but will do for the acidity. A tablespoon of white vinegar also brightens the pot if you have no citrus at all.

Broth

Water works fine in place of the chicken broth here because the salsa carries plenty of flavor. Or use the liquid from a can of beans if you are adding beans to the pot.

How to make it

1. Mix the seasoning

Stir together the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt and pepper in a small bowl. Making it fresh takes 2 minutes and it tastes noticeably better than a packet.

2. Season the chicken

Pat the chicken dry and rub the seasoning over every piece. Lay the chicken in the bottom of a 6 quart slow cooker. If some pieces overlap, that is fine.

Double check that the chicken is completely thawed. Frozen chicken keeps the pot in the unsafe temperature range too long and cooks unevenly.

3. Add the salsa and aromatics

Scatter the diced onion and garlic over the chicken. Pour the salsa and broth on top and squeeze in the juice of one lime. Give it a quick stir so the chicken is coated.

4. Cook

Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 1/2 to 3 hours. Do not lift the lid. The chicken is done when it reaches 165°F in the thickest piece and shreds easily with a fork.

5. Shred and reduce

Transfer the chicken to a cutting board and shred it with two forks. While you shred, set the cooker to HIGH with the lid off so the juices reduce for 10 to 15 minutes. If the liquid still looks thin, ladle out about half a cup.

Return the shredded chicken to the pot and stir it into the juices. Squeeze in the second lime and taste. Add salt if it needs it.

6. Build the tacos

Warm the tortillas in a dry skillet or directly over a gas flame for a few seconds per side. Fill each with a generous spoonful of chicken, then add toppings. Serve with lime wedges.

Use a slotted spoon to lift the chicken out of the pot so each taco gets saucy meat without a puddle of liquid. Keep the extra juices in the cooker for anyone who wants to spoon more over the top.

Common mistakes and how to fix them

Dry chicken. Breasts cooked on the thigh schedule are the usual reason. Pull breasts at 165°F, and always return the shredded chicken to the juices for at least 10 minutes before serving.

Slow Cooker Chicken Tacos: Return the shredded chicken to the juices and stir. Add the juice of the second lime. Taste and add salt if ne

Watery chicken. Too much liquid, or the juices were not reduced. Stick to 1/2 cup broth and let the juices simmer on HIGH with the lid off while you shred.

Flat flavor. The fix is salt and lime. Taste after shredding and adjust. A pinch of sugar also rounds out a very acidic salsa.

Mushy, stringy chicken. It cooked too long. Slow cookers vary, so the first time you make this, check at the early end of the range.

Soggy tortillas. Drain the chicken a little with a slotted spoon before filling, and warm the tortillas so they are pliable and slightly toasted.

Timing and make ahead plan

Mix the seasoning and dice the onion the night before. Rub the chicken with the seasoning, put it in a zip top bag and refrigerate. In the morning it all goes into the pot in two minutes.

This recipe cooks faster than an all day roast. For a 6 p.m. dinner, start on LOW at noon or 1 p.m., or on HIGH at 3 p.m. If you must start it before work, use all thighs, set LOW, and expect softer, more shredded chicken by evening.

Prep toppings while the chicken cooks. Shredded cabbage, pickled onions and a quick pico all keep for 3 days in the fridge.

The chicken can be cooked up to 3 days ahead. Store it in its juices and reheat gently to 165°F.

For a party, cook the chicken in the morning, keep it on WARM and set out a topping bar. It holds safely for up to 4 hours on WARM as long as it stays above 140°F.

Tips for the best slow cooker chicken tacos

Shred the chicken while it is hot. It comes apart in seconds. Cold chicken fights you.

Reduce the juices. This step is what turns a soupy pot into saucy, clingy taco meat.

Char the tortillas. Thirty seconds per side in a hot dry skillet adds toasty flavor and keeps them from tearing.

Finish with fresh lime and cilantro. Slow cooked flavors are deep but mellow, and something fresh on top brings them back to life.

For crispy edges, spread the shredded chicken on a baking sheet and broil for 3 to 4 minutes before serving.

Variations

Salsa verde chicken. Swap the red salsa for salsa verde and add 1 tsp ground coriander.

Chipotle chicken. Stir in 2 minced chipotle peppers in adobo and 1 tbsp of the sauce for a smoky, spicy version.

Chicken and black beans. Add a drained 15 oz can of black beans and 1 cup frozen corn in the last 30 minutes.

Creamy chicken tacos. Stir 4 oz cream cheese into the hot shredded chicken until melted.

Pork instead. Use the same sauce with 3 lb pork shoulder and cook 8 hours on LOW. Or go the traditional route with our slow cooker pork carnitas.

Equipment that makes this easier

A 6 quart slow cooker holds the chicken in a roughly even layer. A 4 quart works for a half batch.

An instant read thermometer confirms the 165°F mark and saves you from overcooking breasts.

Two forks or meat claws shred the chicken quickly. A stand mixer with the paddle on low for 15 to 20 seconds does the whole batch at once.

A cast iron skillet or comal warms and chars tortillas better than a microwave.

A tortilla warmer, or a clean kitchen towel folded around the stack, keeps the tortillas soft and hot while everyone builds their tacos. Cold tortillas crack the moment you fold them.

Scaling up or down

To halve, use 1 1/4 lb chicken, half the salsa and seasoning, and a 3 or 4 quart cooker. Keep the times the same.

To double for a party, use 5 lb chicken and two jars of salsa in an 8 quart cooker. Add about 1 hour on LOW and check the center pieces for 165°F, since they cook slower than the edges.

Do not fill the cooker more than two thirds full. The seasoning blend scales in a straight line, so make a triple batch and keep it in a jar.

Plan on about 1/3 cup of chicken per taco and two or three tacos per person. The full recipe fills roughly 16 tacos.

What to serve with it

Mexican rice, refried beans and a simple cabbage slaw with lime round out taco night. Chips and guacamole never hurt.

Slow Cooker Chicken Tacos, plated and ready to serve

For a bigger spread, put a pot of chipotle black bean soup on the table, or start the meal with a bowl of slow cooker chicken tortilla soup. The fall weeknight meal plan shows how this chicken stretches across several dinners.

How to store, freeze and reheat

Cool the chicken within 2 hours and refrigerate it in its juices in a covered container for up to 4 days.

To freeze, pack the chicken and juices into freezer bags in 2 cup portions, press flat and freeze for up to 3 months. Thaw overnight in the fridge or in a bowl of cold water for an hour.

Reheat in a covered skillet over medium low heat with a splash of water, stirring occasionally, until the chicken reaches 165°F. In the microwave, cover and heat in 1 minute bursts, stirring between each.

Store tortillas and toppings separately. Assembled tacos do not keep.

Leftover ideas

Burrito bowls with rice, black beans, corn and avocado are the easiest second meal.

Quesadillas with Monterey Jack, or nachos with the chicken, cheese, jalapeños and a drizzle of sour cream, are ten minute dinners.

Toss the chicken with romaine, cherry tomatoes, corn, tortilla strips and a creamy cilantro dressing for a taco salad.

Stuff it into bell peppers with rice and cheese and bake at 375°F for 25 minutes, or fold it into scrambled eggs for breakfast tacos.

Nutrition notes

A serving of the shredded chicken alone, about 1/2 cup, comes in around 180 to 230 calories with roughly 25 grams of protein. Thighs push it toward the higher end, breasts toward the lower.

Two corn tortillas add about 100 calories. Flour tortillas, cheese and sour cream add up faster, so lettuce wraps or a bowl with extra vegetables is the lighter route.

Sodium depends heavily on your salsa. Check the label and adjust the added salt in the seasoning to match. Corn tortillas keep the meal naturally gluten free.

Frequently asked questions

How long does chicken take in the slow cooker for tacos?

A mix of thighs and breasts takes 4 to 5 hours on LOW or 2 1/2 to 3 hours on HIGH. Check that the thickest piece reaches 165°F. All breasts finish sooner, around 3 1/2 to 4 hours on LOW.

Can I put frozen chicken in the slow cooker?

No. Frozen chicken keeps the pot in the unsafe temperature range for too long and cooks unevenly. Thaw it completely in the refrigerator first, which takes about 24 hours for boneless pieces.

Why is my slow cooker chicken dry?

Chicken breasts overcook quickly once they pass 165°F. Use thighs or a mix, pull breasts as soon as they hit temperature, and always return the shredded chicken to its juices for at least 10 minutes before serving.

Can I use taco seasoning from a packet?

Yes. One 1 oz packet replaces the homemade blend. Skip the added salt in the recipe, since packets are already salty, and taste at the end.

What toppings go on chicken tacos?

Shredded cabbage or lettuce, cheese, sour cream, avocado or guacamole, pickled red onion, fresh cilantro and lime wedges are the classics. Pico de gallo, pickled jalapeños and crumbled cotija are also great.

How do I keep the chicken from being watery?

Use only 1/2 cup broth, and let the juices reduce on HIGH with the lid off for 10 to 15 minutes while you shred. Return the chicken to the reduced juices so it is saucy but not soupy.
